Good day lovely people! 🥰 It’s a good time to share with you some winter comfort food recipes. It is a season for colds and flu. We do not want that, therefore we need to make our body stronger. Vit D season has gone, time to switch for boosters. I do recommend rich winter soups. It’s easy to make and you can keep them in the fridge up to 3days. November is a ‘pumpkin’ month. You can make pumpkin soup, but my favourite is Butternut squash! Nutrition facts are saying that Butternut is richer in vitamins and minerals than pumpkin! It contains higher amounts: Potassium, Vit A and C, Iron, Vit B6, Magnesium, Calcium, Protein. It is rich in disease fighting antioxidants. This low-calorie, fiber-rich winter squash may help you lose weight and protect against conditions like cancer, heart disease, improving digestion and reducing constipation.

Please try my favourite recipe for winter comfort soup. It can be vegetarian option, but I prefer with chicken!

Butternut squash soup with chilli and creme fraiche

Ingredients: 1x butternut, peeled and chopped in to cubes. 2tbsp olive oil, 1tbs butter, 1x chopped onion, 2x chopped garlic clove, 2x mild red chilliest, 1litre hot veg or chicken stock. 4tbsp crème fraiche. Method: Get a large sauce pan. Melt the butter with olive oil, add onions and garlic and chopped chillies. Cook for 15min until onions are completely soft! Add chopped butternut and cover with veg, or chicken bullion. Cook for 30min until butternut will be soft. Add 4tbsp crème fraiche and blend together until smooth! I serve with cooked chicken bites and greek pita bread! Enjoy!🍲
